Cinnamon Carrot Cake Recipe

Made with Sugar Free Vanilla Syrup, this spicy and savory cake has the hue of falling leaves.

Ingredients:

3 tbsp DaVinci Gourmet Sugar Free Vanilla Syrup

1 ½ c light whipped topping

1 c unsweetened applesauce

½ c water packed crushed pineapple, drained

2 c grated carrots

2 c unbleached flour

1 ¼ c sugar

1 ½ tsp baking soda

1 ½ tsp ground cinnamon

3 egg whites

3 tsp vanilla extract, divided

1 c raisins

8 oz nonfat cream cheese

1 tbsp skim milk

 

Directions:

Cake

  1. Preheat oven to 325 F.
  2. Place flour, sugar, baking soda and cinnamon in a large bowl and stir to mix well.
  3. Add applesauce, pineapple, egg whites, carrots, 2 tsp vanilla extract and raisins.
  4. Coat a 9 x 13-inch glass baking pan with nonstick cooking spray.
  5. Spread the batter in the pan and bake for 40-45 minutes.
  6. Allow cake to cool to room temperature.

Cream Cheese Frosting

  1. Place cream cheese, milk, 1 tsp vanilla extract and syrup in a medium sized bowl and beat with an electric mixer until smooth.
  2. Gently fold in the whipped topping.
  3. Spread the frosting over the cooled cake.
  4. Serve immediately or refrigerate.

Sugar-Free Caramel Mocha Recipe

Who says dessert needs to be eaten with a fork? This rich mocha combines autumn flavors of caramel and chocolate for a sugar-free caffeine fix.

Ingredients:

½ oz DaVinci Gourmet Sugar Free Chocolate Syrup

½ oz DaVinci Gourmet Sugar Free Caramel Syrup

1 oz espresso

1 ¼ c steamed milk

 

Directions:

Pour syrup into a cup, add freshly pulled espresso shots and stir, then pour in steamed milk.

1 serving


Apple Coffee Cake Recipe

Nothing says fall more than a trip to the apple orchard with friends or family. After you’ve picked your heart out, use a few Honeycrisp or Golden Delicious apples in this low sugar coffee cake recipe.

Ingredients:

3 tbsp DaVinci Gourmet Sugar Free Vanilla Syrup

1 c unbleached flour

½ c whole wheat flour

½ c sugar

1 tsp baking soda

1 tsp cinnamon

½ c apple juice

¼ c nonfat sour cream

1 egg white, lightly beaten

2 ½ c thinly sliced peeled apples (about 2 medium)

¼ c chopped walnuts

1 c powdered sugar

 

Directions:

Cake

  1. Preheat oven to 350 F.
  2. Place the flour, sugar, baking soda and cinnamon in a medium sized bowl and stir to mix well.
  3. Stir in the apple juice, sour cream and egg white and mix until just combined.
  4. Fold in the apples and walnuts.
  5. Coat a 9 inch round pan with nonstick cooking spray.
  6. Spread the batter evenly in the pan and bake for 30 minutes.

 

Glaze

  1. Mix the powdered sugar and syrup in a small bowl.
  2. While the cake is still warm in the pan, pour the glaze over the top.
  3. Allow the cake to cool at least 45 minutes before cutting and serving.
